Homemade Granola Bars for the Paekakariki Escarpment Walkway, New Zealand

Before we left North Carolina one of my very good friends sent us off with a granola bar recipe that would provide us with energy and stamina on our many anticipated hikes (or “tramps” in Kiwi).  So here is the recipe sent to us with Love from NC for our New Zealand Adventure.
INGREDIENTS:

  • 2 Cups Oats
  • 1 Cup Flour (option almond meal)
  • 3/4 Cup Brown Sugar (option coconut sugar)
  • 3/4 Cup Raisins
  • 1/2 Cup Wheat Germ (NZ option – Bulgur Wheat soaked in hot water for 10 min)
  • 1/2 tsp Himalayan salt
  • 1 tsp Cinnamon
  • 1/2 Cup Coconut oil
  • 1/2 Cup Raw Honey (NZ – Manuka)
  • 1 Egg
  • 2 tsp Vanilla Extract
  • Optional items used: 1 Cup chopped walnuts, 2 Tbsp flax seeds , 2 Tbsp chia seed powder
  • Other optional Items: chocolate chips, dried fruit (cranberries, bananas, blueberries)

INSTRUCTIONS:

  1. Preheat oven to 350 degrees
  2. Line 9 x 13 inch pan with parchment paper greased with oil
  3. Combine dry ingredients in a bowl: oats, flour, brown sugar, raisins, wheat option, salt, cinnamon, nuts, almond meal, flax seed.
  4. In another bowl combine wet ingredients: oil, honey, egg, vanilla
  5. Pour wet mixture into dry mixture and stir by hand until blended
  6. Press evenly into the pan
  7. Bake 25-30 min
  8. Let it cool completely
  9. Pack it for your hike along with water and fresh fruit

THE HIKE a.k.a THE TRAMP

The Paekakariki Escarpment Walkway is located in Wellington NZ.  It is a  10 km (6.2 mile) hike, 3.5 hrs walking from end to end with 400 meter (1312 ft) elevation to the lookout, 500 wooden steps, 2 swinging bridges.  We tackled only half of it from Paekakariki to the Lookout (round trip 6.5miles and we tackled all 1312 feet).  We saved the swinging bridges for another day.  Below are a few pictures of the spectacular views from this Adventure.
