Ingredients:

For the Teriyaki Sauce:

  • 1/2 cup low-sodium soy sauce or coconut aminos (great for soy-sensitive tummies)
  • 1/4 cup water
  • 3 tablespoons honey (or sub brown sugar if preferred)
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated ginger
  • 1 tablespoon cornstarch or arrowroot powder
  • 2 tablespoons water (to mix with thickener)

For the Casserole:

  • 1 pound chicken breasts or thighs
  • 1 cup jasmine or basmati rice (rinsed well)
  • 1 1/4 cups water or broth
  • 1 cup shredded carrots
  • 1 cup chopped red bell peppers
  • 1 cup broccoli florets
  • 1/2 cup peas (frozen or fresh)
  • 1/2 cup chopped green onions (garnish)

Instructions

  1. Prep First: Chop your veggies and rinse your rice. Keep everything handy.
  2. Sauté the Chicken (Optional): Turn your Instant Pot to Sauté. Add a splash of oil and sear the chicken for 2–3 minutes per side. This step boosts flavor but can be skipped if you’re in a hurry.
  3. Layer in the Pot: Add 1 1/4 cups water or broth to the pot. Spread rinsed rice evenly. Place the seared chicken right on top.
  4. Pressure Cook: Secure the lid and set the valve to Sealing. Select Manual/High Pressure and cook for 10 minutes. Let it naturally release for 10 minutes, then manually release any leftover pressure.
  5. Make the Teriyaki Sauce: While the pressure releases, make your sauce.
    Combine soy sauce (or coconut aminos), 1/4 cup water, honey, vinegar, garlic, and ginger in a small saucepan. Bring to a simmer. In a separate bowl, mix cornstarch with 2 tablespoons of water and whisk into the pan until the sauce thickens. Remove from heat.
  6. Add the Veggies: Once the lid comes off, shred the chicken directly in the pot using two forks. Stir in carrots, bell peppers, broccoli, and peas. The heat from the rice and chicken will cook them until just tender. Want them softer? Use Sauté for a few more minutes.
  7. Mix with Sauce. Pour the teriyaki sauce into the pot and stir well to coat everything.
  8. Garnish & Serve: Top with green onions and serve warm.
