Oatmeal Raisin Carrot Breakfast Muffins

To help you with your New Year Resolution of eating breakfast daily, here is a kid friendly, healthy, make-ahead recipe to enjoy daily.  With bananas, carrots, raisins, and oats, you can send your kids to school with a healthy breakfast on the go and avoid colored, sugared cereals. And as always, this is a simple recipe that can be made by kids, especially on snow days that may be lacking in snow (talking to you Charlotte, NC)

Components of a Healthy Breakfast: Fruit, Veggies, Protein, Healthy Fats, Complex Carbs

Ingredients:

Mix the following dry ingredients together – 

  • 1 1/4 cup all purpose flour
  • 1/2 cup packed organic coconut sugar (more antioxidants and minerals, lower glycemic index then regular brown sugar)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp Himalayan salt (again more minerals and antioxidants)
  • 1 cup old fashioned rolled oats
  • 3/4 cup raisins

Mix the following wet ingredients together

  • 1 large egg
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup organic whole milk (do not be afraid of healthy fats)
  • 2 cups of shredded carrots (shred on the smallest holes possible)
  • 1 medium banana, mashed (excellent use for frozen bananas)

Instructions:

    1. Preheat oven to 400 degrees F, 200 degrees C
    2. Grease muffin pan with virgin coconut oil
  1. Mix wet ingredients with dry ingredients until well blended
  2. Distribute evenly into muffin tins
  3. Bake for 20-25 min, until toothpick inserted in centre comes out clean
