Ingredients (for 4 slices):

  • 4 slices sourdough bread (preferably day-old or dried overnight)
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 1/2 tsp vinegar or lemon juice (to make buttermilk)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 pinch salt
  • 1 tsp maple syrup or coconut sugar (optional)
  • Butter or oil for the pan

Optional Toppings:

Fresh fruit, pure maple syrup, coconut yogurt, sunflower seed butter, or a sprinkle of cinnamon.

Instructions

  1. Make your buttermilk:
    In a measuring cup, add 1 1/2 teaspoons vinegar or lemon juice to 1/2 cup milk. Stir and let sit for 5–10 minutes until slightly thickened/curdled.
  2. Mix the custard:
    In a shallow bowl, whisk together eggs, buttermilk (your milk + vinegar mixture), vanilla, cinnamon, salt, and optional sweetener.
  3. Soak the bread:
    Dip each sourdough slice in the custard for 20–30 seconds per side, letting it soak up the mixture.
  4. Cook it up:
    Heat a skillet or griddle over medium heat and add butter or oil. Cook each slice for about 3–4 minutes per side, until golden brown and crisp.
  5. Top & serve:
    Serve warm with your favorite toppings.
