Gut Friendly Easy Sourdough Bread French Toast

This Sourdough Bread French Toast with Buttermilk has become a favorite in our kitchen. 

Sourdough bread is often easier to digest thanks to its fermentation process, making it a great swap for conventional bread, especially for families focused on gut health. 

Combine that with protein-rich eggs and the richness of buttermilk (or your favorite dairy-free option), and you’ve got a balanced start to the day that won’t spike blood sugar or inflame sensitive skin.

Best of all, it’s easy to make and customizable for picky eaters or food sensitivities.

Ingredients (for 4 slices):

  • 4 slices sourdough bread (preferably day-old or dried overnight)
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 1/2 tsp vinegar or lemon juice (to make buttermilk)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 pinch salt
  • 1 tsp maple syrup or coconut sugar (optional)
  • Butter or oil for the pan

Optional Toppings:

Fresh fruit, pure maple syrup, coconut yogurt, sunflower seed butter, or a sprinkle of cinnamon.

Instructions

  1. Make your buttermilk:
    In a measuring cup, add 1 1/2 teaspoons vinegar or lemon juice to 1/2 cup milk. Stir and let sit for 5–10 minutes until slightly thickened/curdled.
  2. Mix the custard:
    In a shallow bowl, whisk together eggs, buttermilk (your milk + vinegar mixture), vanilla, cinnamon, salt, and optional sweetener.
  3. Soak the bread:
    Dip each sourdough slice in the custard for 20–30 seconds per side, letting it soak up the mixture.
  4. Cook it up:
    Heat a skillet or griddle over medium heat and add butter or oil. Cook each slice for about 3–4 minutes per side, until golden brown and crisp.
  5. Top & serve:
    Serve warm with your favorite toppings.
