Bone Broth and Chicken Noodle Soup, Recipe and Health Benefits

There are tons of Bone Broth recipes out there.  This one is the house favorite and its courtesy of my mother.  Consider making Bone Broth, especially for if you are trying to heal chronic diseases such as eczema, allergies, asthma, food intolerances, anxiety, etc. Other reasons to attempt this recipe are the desire for younger skin, shinier hair, less constipation, better immune system.  It is an easy dish to prepare and it can be made using lots of leftovers from your fridge.  Like anything else, it seems daunting until you cook it a few times, and then it becomes second nature.  If I can make it, you can too.  This dish is best made on a non-work night.

Health Benefits of Bone Broth

Generally, I make 2 dishes, Chicken Noodle Soup and Bone Broth out of this one recipe for time-saving purposes.  I outline the options below.  Of note, a carton of Organic Bone Broth is $10 in New Zealand, thus homemade is much cheaper. Home-made chicken noodle soup has been shown to have anti-inflammatory properties in medical studies:

  • carrots and celery are full of vitamins to build up the immune system
  • broth loosens snot and has anti-inflammatory properties
  • chicken is great protein to strengthen the body while feeling down, long lasting energy
  • noodles help keep you fool longer and provide the body with much-needed quick energy

Ingredients:

  • 3 grass fed beef bones
  • 1 organic chicken whole
  • 3 chicken feet (optional), excellent collagen
  • 1 white onion, cut in half
  • 1 head of garlic
  • 5 carrots washed, no need to peel
  • 6 stalks of celery washed, cut in half
  • 1 parsnip washed, no need to peel
  • 1 green pepper cut in half and seeded
  • 2 cinnamon sticks
  • 6 cloves
  • 9 peppercorns
  • 2 bay leaves
  • Himalayan Salt

Instructions:

  1. Rinse bones, feet, chicken under cold water
  2. In a large pot place bones and chicken feet
  3. In cheese cloth – place garlic, cinnamon sticks, cloves, peppercorns, bay leaves.  Tie it up.
  4. Place all veggies and cheese cloth spices on top of bones
  5. Place chicken on top of everything
  6. Fill pot with water to just cover the chicken, about 18 cups
  7. Bring pot to a gentle boil
  8. Skim the brown gross stuff off the top – about 20 min into cooking.  Takes about 30 min to get rid of it all.  (Most annoying part of soup making).
  9. Once all gross stuff is gone, let soup cook for 1hr.
  10. Season to taste with Himalayan salt
  11. Strain broth into a pan.  This can be it, or you can go to the next step for chicken noodle soup and extra broth

Extra Broth in Slow Cooker

Fuji Mama

  1. Place cooked bones, feet, and spice satchel in slow cooker
  2. Add fresh celery sticks (I use the leafy tops), leftover pepper pieces, white onion cut in half, parsnip, and whatever you may have laying around.  It all works.
  3. Fill slow cooker with water
  4. Cover, place on low and leave it overnight 12-24hrs.
  5. When you are ready season to taste.
  6. Strain broth in a cold bowl for faster cooling.
  7. Keep broth, discard the rest.
  8. Cool and store in ice cube trays or plastic baggies in 2-4 cup serving sizes for easy defrost later

Dosing of Bone Broth to heal chronic disease?

  • For healing – daily ingestion is best.  6 oz daily
  • For maintenance of health –  whenever possible
  • Cook with it – pasta, rice, quinoa, couscous, etc.  More flavor and better gut health.
  • Add it to sauces – curries, pasta sauces, Mexican dishes, or anything that is savory and suggests water

Storage

  • Keep in fridge for up to 4-5 days
  • Keep in freezer for up to 3 months
  • Keep in baggies of 2-4 cup serving sizes for easy defrost later
